Lentil Dahl

Vegan Serves 4

Ingredients

  • Splash of oil
  • 1 Tbsp butter (use vegan butter)
  • 1 onion, diced
  • 3 tsp garlic
  • 2 tsp ginger
  • Sprinkle chilli flakes
  • 1½ tsp cumin
  • ½ tsp garam masala
  • 2 tsp turmeric
  • 1 litre vegetable stock
  • 3 bay leaves
  • Sprinkle cinnamon
  • 1½ cups lentils
  • Lemon juice, to taste
  • Coriander, to taste
  • Rice, to serve

Instructions

  1. Put rice on to cook.
  2. Heat oil and butter in a pan. Add onion and cook until soft.
  3. Add garlic and ginger and cook briefly until fragrant.
  4. Add cumin, garam masala and turmeric. Stir well.
  5. Add vegetable stock and bring to the boil.
  6. Add bay leaves and a sprinkle of cinnamon.
  7. Add lentils and a squeeze of lemon juice.
  8. Simmer for 15 minutes until lentils are soft.
  9. Stir through coriander.
  10. Remove bay leaves and serve with rice.
